  • SPRING SALAD WITH ORANGE VINAIGRETTE

Ingredients:

  • 1/4 C Cuisine Perel Blood Orange Vinegar (if not available, mix in a bit of the juice from the mandarin oranges with white wine vinegar)
  • 1t Dijon Mustard
  • 1/2 C orange juice
  • 1/2 C Hazelnut Oil
  • 1/4 C toasted chopped hazelnuts
  • 1/2 t each salt and pepper

Directions:

  1. Whisk all ingredients together in a small bowl and chill.

  2. Toss vinaigrette with assorted mixed greens and add chopped hazelnuts, minced scallions, orange segments or mandarin oranges and crumbled feta or goat cheese. This is a PERFECT spring salad! Quick, easy and delicious. All ingredients available at Grand River Grocery.
