20 minutes / 10 minutes prep time - Serves 8

From the kitchen of our in market Chef, Erin Van Epps and served at our August 08 Grillfriends Dinner - absolutely delicious, easy and “showy”!

Ingredients:

1 T garlic, finely chopped

1/2 C fresh squeezed lemon juice, divided

1/4 C white wine

2 T olive oil

1/4 lb. butter, melted

1/8 t salt and pepper

1/3 C fresh parsley, coursely chopped

2 lbs Grand River Grocery frozen Green Lip Mussels (already halved and cleaned - ready to go!)


Directions:

  1. Whisk together garlic, 1/4 C of lemon juice, white wine, olive oil and melted butter in a small sauce pan.

  2. Preheat the grill to medium high heat.

  3. Sprinkle mussels with salt and pepper and remaining lemon juice, place mussels directly on the grill.

  4. Grill mussels, covered with the grill lid, 7-10 minutes.

  5. Transfer mussels to a large dish and pour the garlic butter mixture over the mussels, stirring gently to coat and sprinkle with parsley. Serve immediately with bread.
