Local farm raised ribs knock these ribs out of the park!

Enough rub for 3 full racks of baby back ribs. From Catering Chef, Chris Ferris of Holland

Ingredients:

The following spice blend is also delicious on grilled salmon and chicken! 1/2 C sugar

2 t dry mustard

1/2 t cinnamon

2 T paprika

8 T unsweetened cocoa

1/2 C chili powder (or ground ancho chilies)

2 T Ground cumin

4 t freshly ground pepper

3 T coarse salt

4 T tomato paste

4 T raspberry jam


Directions:

Be sure to purchase Creswick Farms baby back ribs! Local and farm raised ribs are not only superior in quality, they’re also superior in flavor!

  1. For the ribs, rub 1/2 the mixture onto the ribs, then place in a large pan that is at least 3 inches deep. The ribs can be overlapping a bit.
  2. Pour 1 inch of water around the spiced ribs, then wrap pan tightly with foil and bake at 275 degrees for 3 hours. Cool.
  3. Pour the cooking liquid off, then slather with the following sauce:
  4. Put the remaining spice blend into a small sauce pan and add 1 C water, 4 T tomato paste, 4 T raspberry jam and slowly heat through, stirring until smooth.
  5. Brush the sauce over the ribs, then broil or grill until heated through and sauce begins to carmelize.
