  • ROASTED GARLIC GREEN BEANS WITH BLUE CHEESE

Serves 2

This recipe was inspired on a journey north and dinner at a favorite Traverse City restaurant, Trattoria Stella.

Ingredients:

1/2 lb.  blanched green beans

3T Extra Virgin Olive Oil

1/2 T - 1T minced garlic

1-2 oz Roth Kase Buttermilk Blue

Salt and pepper to taste

Lemon wedges


Directions:

1. Blanch green beans in boiling, salted water for 2-3 minutes.  Shock beans in an ice water bath until cooled completely.

2.  In a small saute pan, combine the olive oil and garlic and cook on low heat until garlic browns slightly.  Remove from heat.

3. Toss together the green beans, garlic mixture and salt and pepper to taste.

4.  Crumble blue cheese on top and squeeze fresh lemon over the beans.
