  • PERSIAN RICE WITH PISTACHIO’S AND DILL

Serve this exotic combination with grilled chicken breasts marinated in yogurt mixed with BLiS Morroccan rub!

Ingredients:

3T salt

3C rinsed basmati rice (available at Grand River Grocery)

1C pistachio meats / chopped (available at Grand River Grocery - shelled!)

2/3C fresh dill, chopped

3/4C unsalted butter


Directions:

Basmati is a finer, longer grain rice and very fragrant - boil 4 qts of salted water in a 6 qt heavy saucepan.  Add rice and boil 5 minutes, then drain.

Melt the butter in the bottom of the rinsed pan, the spoon the rice back into the pan, over the butter and layer with dill and pistachio's.  End with rice.

Cover with kitchen towel and pan lid, folding towel over lid so it doesn't burn grin and cook on low heat for 30 minutes.

Remove from heat and let stand covered for an optional 30 minutes more.  Spoon rice onto large platter and top with crunchy pieces from the bottom of the pan.

Garnish with extra chopped pistachio nuts and dill sprigs.
