
- MRS DOGS SHRIMP WITH RUM
Otherwise known as "Glad Shrimp"
Ingredients:
3 T butter
1 1/2 lbs of shrimp (peeled and deveined)
2-3 T Mrs Dog's Jamaican Jerk
1/4 C dark rum
3 T fresh lime juice
1/4 C fresh mint - chopped
salt and pepper to taste
Directions:
1. Melt butter with jerk in large skilled over medium heat. Saute shrimp for a minute or two.
2. Stir in rum and lime juice. Bring mixture to a boil and cook until shrimp mare just done (pink and curled).
3. Remove shrimp to a serving dish with a slotted spoon.
4. Now boil the sauce until thickened.
5. Adjust seasoning if necessary adding more salt and lime juice to taste.
6. Pour sauce over the shrimp and sprinkle with fresh mint.
7. Serve at once with toothpicks.
