  • MOROCCAN RACK OF LAMB

From Chef Steve Stellard of BLiS Products

Ingredients:

1 Pilot House rack of lamb

BLiS Moroccan Rub

1 lemon sliced thick

1 orange sliced thick

1 clove of garlic


Directions:

1. Rub the racks with the garlic clove and generously coat the lamb rack with Moroccan rub and let stand for an hour.

2. To roast in the oven, place the rack on top of the orange and lemon slices.

3. Roast in a 375 degree oven for 15 to 20 minutes, or until done to medium. When meat is done, let rest for at least 20 minutes.

4. Serve over couscous and garnish with roasted citrus.
