Bakery News
We are please to welcome our newest member to the GRG line-up, Haley McNeil. Haley starts this week and will be our Pastry Chef/Bakery Manager, she is excited to be working back in her home-town of Ada and is anxious to meet our customers.

BEAUJOLAIS NOUVEAU
It's that time of year again. The third Thursday in November is marked by the release of Beaujolais Nouveau. A true expression of the harvest, this wine is quickly fermented while still in whole-berry form and pressed in order to yield a fresh, fruity wine that is smooth and easy drinking with very little tannin.
Although these wines can have character, they are made for the purpose of the celebration of the years harvest and not to win any critic's choice awards. They are fruity, fun and and soda-poppy and not meant to be taken too seriously.
We brought in three this year, and it is a happy coincidence that this falls a week before Thanksgiving, for they pair beautifully with roast turkey, and are simple enough that you can focus on family and conversation, rather than wine.
2010 Antonin Rodet Beaujolais Nouveau: Sweet fruit and perfume on the nose. Tart juicy fruit flavors of cherry, red currant and cranberry. Easy and fun.
2010 Albert Bichot Beaujolais Nouveau: Slight earthiness on the nose. Red currants and plums. More weight than the Rodet but still fruity, easy-drinking and smooth as silk. *This was our favorite*
2010 Albert Bichot Beaujolais Nouveau, Beaujolais Villages: Aromas of candied fruits and violets. Tart cherries and red plums mixed with a slight gravelly earthiness on the palate. Uber-fruity and very similar to the Rodet, with a little more body.
Serve Beaujolais Nouveau slightly chilled. $10.49/bottle

Mollydooker Wines
The Molly Dooker Vineyard of South Australia has been generating a lot of buzz lately. That is why we decided get them into our store when they became available. We currently carry The Maitre D' (Cabernet Sauvignon), Two Left Feet (Merlot), and The Boxer (Shiraz); all of which are part of their 2008 vintage.
The Molly Dooker winemakers use inert Nitrogen gas during the bottling process as a way to protect the fruit flavor of their wines in the bottle. Nitrogen gas is a great preservative so that means they can use fewer sulphites in their winemaking.
Since the winemakers use nitrogen in the bottling process, they have come up with a process to release the nitrogen from the wine and introduce oxygen to the wine thus "opening up" the wine. They call this process "The Molly Dooker Shake."
The Molly Dooker Shake consists of the following:
1. Into a wine glass, pour out half of a glass (or until the wine is mid-shoulder)
2. Put the cap back on the bottle
3. Invert the bottle and SHAKE; they suggest doing so vigorously
4. You will see fine bubbles of nitrogen rise to the top of the wine
5. Remove the cap to release the nitrogen out of the bottle
6. Repeat steps 2-5. Drink and Enjoy!

I tried the Maitre D' the other day and first tasted the wine without doing the "Molly Dooker Shake" and it did present as a very bold cabernet would be expected to taste. I then followed the above steps for the Molly Dooker Shake, and was amazed by how the flavor had changed. The very tight taste that first hit my palate was gone, and the wine had softened dramatically. The fruit in the wine was much more apparent both on the nose and in the taste.
Having already tasted the Two Left Feet Merlot and now the Maitre D' Cabernet, I highly recommend that anyone that enjoys a delicious glass of Cabernet, Merlot, or Shiraz stop on in the Market and take one of these GREAT wines home today!

MICHIGAN CHEESE SELECTION
This month as we celebrate the bounty of Michigan, I'm encouraging all of you to "get using Michigan cheese!". Check out our new recipe for Peach Crostini using Grassfields Polkton Corners cheese, posted on our website. Here's what we've got:
- Reny Picot's (Benton Harbor) Camembert and Camembert Fermier is wonderful with honey and grilled peaches.
- The new "Truffle Jack" cheese from Farm Country (Lakeview) makes outstanding mac n' cheese!
